Millet Banana Cake

Ingredients

  • 2 large ripe bananas
  • 6 tbsp dry dates powder (kharek)
  • ยฝ tsp cinnamon powder
  • 1 tsp baking soda
  • ยผ tsp unrefined salt
  • 1 flax egg (1 tbsp flaxseed powder mixed with 3 tbsp warm water)
  • 2 tbsp coconut butter/peanut butter
  • 1 cup sorghum (jowar) flour or any millet flour of choice
  • 1 tbsp chopped walnuts (optional)
  • 1 tbsp chopped dairy-free chocolate chips/cacao nibs (optional)

Method

Preheat the oven to 190 ยฐC. Line a small loaf pan with parchment paper. Mash the bananas well, and add in the ingredients in the order above. Mix until well combined. Do not over mix. Transfer to the loaf pan. Top walnuts & chocolate chips if preferred. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Allow to cool before devouring.

Makes one small loaf
