Sweet Potato Pudding

Sweet potatoes are a rich source of magnesium. They help in relaxation, as they contain anti-stress minerals!


  • 2 large sweet potatoes, washed and halved vertically
  • 1 cup coconut milk
  • ½ cup freshly squeezed orange juice
  • ¼ cup date paste
  • 1 tsp vanilla powder
  • ⅛ tsp unrefined salt


Bake the sweet potatoes skin side up in the oven at 180 ºC, for 45 minutes, until soft and tender. Allow to cool and then scoop the flesh out. Blend the flesh with the rest of the ingredients. Refrigerate for 3 to 4 hours. Garnish with fresh pomegranate or whole almonds and serve.
