Bake the sweet potatoes skin side up in the oven at 180 ºC, for 45 minutes, until soft and tender. Allow to cool and then scoop the flesh out. Blend the flesh with the rest of the ingredients. Refrigerate for 3 to 4 hours. Garnish with fresh pomegranate or whole almonds and serve.
