Date, Nut and Fig Roll


For the Filling

  • ½ cup coarsely chopped mixture of nuts and raisins
  • A few drops of vanilla extract
  • ¼ cup desiccated coconut

For the Roll

  • ½ cup dried figs
  • ½ cup dates, pitted
  • ¼ cup walnuts/almonds
  • ¼ cup rolled oats
  • ⅛ tsp unrefined salt


In a food processor, process walnuts and oats together to make a coarse powder. Now add the dates, figs and salt and blend until it all clumps together to form a dough. In a bowl, mix all the ingredients of the filling and keep aside. Knead the dough by hand and add the filling mixture to it. Mix it well by hand. Start rolling the dough to form a log. Wrap the log with parchment paper and refrigerate for 6-8 hours, or preferably overnight. Cut into discs and serve. Store in an airtight container in the refrigerator.
