Strawberry Tart (raw)

This recipe was demonstrated by Lisa Pitman during her Eating Without Heating demos in India.


For the Crust

  • 1 cup raw almonds
  • ½ cup large dates, pitted
  • 1 tsp vanilla extract
  • ⅛ tsp unrefined salt

For the Cream

  • 1 cup cashew nuts, soaked for 2-4 hours and drained
  • ¼ cup water
  • ¼ cup date paste
  • 2 tbsp lime juice

For the Topping

  • 2 cups sliced strawberries


In a food processor, pulse the almonds to a flour. Add the dates, vanilla extract and salt. Pulse until the mixture begins to clump together. Press firmly and evenly into a parchment paper lined 9″ springform pan. Keep aside in the refrigerator, until the cream cheese is ready. In a blender, combine the ingredients for the cream until smooth. Pour the cream over the crust and set in the refrigerator for at least 2 hours. Add the sliced strawberries just before serving.

Any seasonal fruit can be substituted – for e.g. mango, banana, peach.

Serves 5-6
