  • 1 cup whole wheat flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp unrefined salt
  • ¾ cups chocolate chips (or finely cut non dairy cooking chocolate) (optional)
  • ¼ cup chopped walnuts
  • ⅓ cup soy milk plus a little extra soy milk if the mixture is too difficult to mix
  • 1¼ cups date paste
  • ¼ cup silken tofu or firm tofu or thick cashew cream
  • 1 tbsp pure vanilla extract

Preheat the oven to 350 ºF (180 ºC). In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, walnuts and chocolate chips (if using). In a blender, blend the soy milk, date paste, tofu and vanilla. Add the blended mixture to the flour mixture in a large bowl and stir until just combined. The batter will be thick. Spread the batter out evenly into an 8″ square baking dish lined with parchment paper. Bake in the preheated oven for 35 minutes, or until a toothpick inserted in the centre comes out clean.
