Coconut Pineapple Smoothie Ice cream

Ingredients

  • 1 cup tender coconut water
  • 1 banana, frozen for a thicker and creamier consistency
  • 1½ cups roughly chopped frozen pineapple
  • ⅛ tsp ground ginger
  • ½ tsp vanilla extract

Method

Layer ingredients in a blender and puree, until smooth and creamy. With the blender turned off, use a spatula to scrape the sides down as needed. Scoop into glasses or bowls and serve immediately. Enjoy!
