Coconut Pineapple Smoothie Ice Cream
- 1 cup tender coconut water
- 1 banana, frozen for a thicker and creamier consistency
- 1½ cups roughly chopped frozen pineapple
- ⅛ tsp ground ginger
- ½ tsp vanilla extract
Layer ingredients in a blender and puree, until smooth and creamy. With the blender turned off, use a spatula to scrape the sides down as needed. Scoop into glasses or bowls and serve immediately. Enjoy!
