Easy, healthy cookie recipe with all good ingredients! No white flour, no sugar, no eggs or butter, yet delicious!
Knead all the ingredients together into a dough, adding wheat flour as required to make the dough. Taste for sweetness and add more date paste if required. Roll into ½” diameter balls, flatten and place on a parchment lined baking tray. Bake in an oven at 250 ºF (120 ºC). Turn them over when the turn light brown and bake the other side. Allow to cool and enjoy.
Variations
Because of the natural oils in the coconut, peanuts and the sesame/peanut butter, refined fats are not required. All the ingredients are healthy, and the recipe is quite flexible – i.e. you can replace the peanuts with cashew nuts or the raisins with date pieces or cranberries. Sesame seeds (high in calcium) can be added for taste too. Desiccated coconut can be used in place of fresh coconut and wheat flour can be replaced with ragi or other grain flours. Whatever you do, it usually comes out well and is very quick to make.
