Thai Peanut Salad

Ingredients

  • 2 cups shredded white cabbage or shredded Chinese cabbage
  • 1 cup grated carrots
  • ½ an onion, finely sliced
  • ¼ cup thinly sliced French beans 
  • ¼ cup chopped cherry tomatoes 
  • 3-4 tbsp crushed roasted peanuts

For the Dressing

  • ¼ cup peanut butter
  • ¼ cup water
  • 2 cloves garlic, finely minced
  • 2 tbsp lemon juice
  • 2 tbsp soy sauce
  • Unrefined salt and black pepper powder to taste

Method

Toss all the salad ingredients together in a large bowl. Keep aside.

Prepare the dressing by mixing all the ingredients together (add more water if required). Pour over the salad. Toss well and serve.

Serves 3-4
