Vegan Caesar Salad


  • 1 large head of romaine lettuce (or any available lettuce), roughly chopped
  • ¼ cup thinly sliced onions 
  • ¼ cup whole wheat bread croutons or toasted whole wheat baguette, cut in to 1 cm cubes
  • ¼ cup cooked chickpeas 
  • 2 tbsp Caesar dressing
  • 2 tbsp fresh herbs of choice (chives or spring onions/ celery/ parsley/ coriander)


Arrange the lettuce on a serving plate and drizzle the dressing over the leaves. Place the onions, croutons and chickpeas on top. Garnish with herbs of choice. Serve.


You may use tofu or any other cooked beans instead of chickpeas.
