Corn, Sprouts and Tomato Cups

Serves 4

Ingredients

  • ½ cup steamed corn kernels
  • 1 cup sprouted whole green moong (green gram)
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 2 green chilies, finely chopped
  • 1 tbsp finely chopped fresh green coriander
  • ½ cup cashew cream
  • Unrefined salt to taste
  • 8-10 large lettuce leaves to prepare rolls or cups
  • 1 tbsp mint leaves, for the garnish

Method

Place all the ingredients in a mixing bowl (except the lettuce leaves and mint) and mix well. Place in the refrigerator for an hour. When serving, use lettuce leaves as cups and place a few tablespoons of the salad mixture in the centre, garnish with mint leaves and serve.
