Raw Bitter Gourd (Karela) Salad

Ingredients

  • 2 medium-sized bitter gourds (karela), deseeded and thinly sliced
  • ยฝ a small-sized onion, sliced
  • ยฝ a small-sized tomato, sliced
  • 1 tbsp lemon juice
  • ยฝ tsp black salt (kala namak)
  • ยฝ tsp black pepper powder
  • ยฝ tsp chaat masala
  • ยฝ tsp unrefined salt, or to taste
  • 2 tbsp roasted and crushed peanuts

For the Garnish

  • 1 tsp roasted and crushed peanuts
  • 1 tbsp coconut flakes
  • 1 tbsp coriander leaves

Method

  1. Place the bitter gourd, onion, and tomatoes in a mixing bowl.
  2. Add lemon juice, spices and peanuts.
  3. Mix well, use your hands to squeeze the bitter gourd gently to tenderise them.
  4. Serve garnished with peanuts, coconut and coriander leaves.

Variations

Add grated coconut instead of peanuts to make the salad completely raw. You may also choose to add other vegetables of choice – grated carrot or beetroot. Add date paste to add some sweetness if preferred.
