Potato Salad with Mayonnaise
- 2 large potatoes, unpeeled, diced and steamed.
- 3 – 5 spring onions, finely chopped or ½ onion, finely chopped
- 1 stalk of celery, finely chopped
- ¼ cup capsicum, finely chopped
- 5 – 6 tbsp tofu mayonnaise/ cashew mayonnaise
- ½ tsp freshly ground pepper
- ½ tsp mustard
Mix all the above ingredients together. Add a little salt and lemon if needed. Serve.
