Whole Wheat Vegan Brownies

Ingredients

  • 1 cup whole wheat flour
  • ยฝ cup cocoa powder
  • 1 tsp baking powder
  • ยฝ tsp baking soda
  • ยฝ tsp unrefined salt
  • ยพ cups chocolate chips (or finely cut non dairy cooking chocolate) (optional)
  • ยผ cup chopped walnuts
  • โ…“ cup soy milk plus a little extra soy milk if the mixture is too difficult to mix
  • 1ยผ cups date paste
  • ยผ cup silken tofu or firm tofu or thick cashew cream
  • 1 tbsp pure vanilla extract

Method

Preheat the oven to 350 ยบF (180 ยบC). In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, walnuts and chocolate chips (if using). In a blender, blend the soy milk, date paste, tofu and vanilla. Add the blended mixture to the flour mixture in a large bowl and stir until just combined. The batter will be thick. Spread the batter out evenly into an 8โ€ณ square baking dish lined with parchment paper. Bake in the preheated oven for 35 minutes, or until a toothpick inserted in the centre comes out clean.
