Tomato & Basil with Balsamic Dressing


  • 6-8 ripe tomatoes, sliced
  • 8-10 basil leaves
  • ½-1 tsp balsamic vinegar
  • 1″ cubes of Swiss cheese (optional)
  • Cracked black pepper to taste


Arrange the tomatoes on a plate or a bed of rocket leaves, tear basil leaves and sprinkle over the tomato slices. Basil gives a much better aroma and taste if it is not cut with a knife. Add the cheese if using, drizzle over balsamic vinegar to taste. Serve with a sprinkle of cracked black pepper.
