Seaweed Salad

Serves 8

Ingredients

  • 2-3 seaweed nori sheets
  • 300 g radish, thinly sliced with a peeler into ribbons
  • 300 g carrots, thinly sliced with a peeler into ribbons
  • 300 g cucumber, thinly sliced with a peeler into ribbons
  • 150 g onion, sliced
  • 30 g garlic, finely minced
  • 2 tsp apple cider vinegar or juice of 1 lime
  • 2 tsp unrefined salt
  • ½ tsp date paste
  • 1 tsp mustard powder
  • Black pepper powder to taste

Method

Cut the nori sheets into strips. Place the rest of the ingredients in a bowl and toss gently. Serve the salad garnished with the seaweed strips.
