Papaya and Greens Salad

Fruits are not meant to be mixed with meals. However, this delicious salad can be enjoyed as a meal in itself.

Serves 2

Ingredients

  • 1 small ripe papaya
  • 1 cup baby spinach or any green leaves of choice
  • ยผ cup grated fresh coconut
  • Juice of 1 lime
  • Unrefined salt to taste

Method

Spread the leaves on a serving plate. Keep aside. Peel, deseed and chop the papaya into ยฝ inch cubes and place them over the bed of greens. Sprinkle salt, lime juice and coconut on top and serve.
