Eggless Egg Salad

Ingredients

  • 1 cup crumbled firm tofu
  • ¼ cup chopped onion
  • 2 tbsp finely chopped red or green bell pepper (capsicum)
  • 2 tbsp finely chopped celery
  • 6 tbsp vegan mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp unrefined salt
  • ½ tsp black pepper (kali mirch) powder
  • 1 sprig fresh parsley, for the garnish (optional)

Method

Mix well together all the ingredients except for parsley. Garnish with parsley and serve.

Serves 2-3
