Tomato Soup with Basil and Olives


  • 1 onion, chopped and sprinkled with salt
  • 7-8 grated tomatoes
  • 4 cloves garlic
  • a small bunch of basil chopped
  • 7 olives, chopped in to circles
  • 1 tsp salt or to taste
  • ½ tsp black pepper
  • ¼ cup of unpolished rice
  • ½ tsp red pepper powder
  • 1 tsp date paste

Heat a pot; add the onion and garlic and fry them in their own water for a while, till golden. Then add red pepper powder and 1 glass water. Add the tomatoes, the black pepper and the date paste. Then add the rice and 2-3 more glasses of water. Boil till the rice is almost ready. Then add olives and finally add the basil and switch off the fire.

Serves 3-4
