Palak Soup

Ingredients

  • 2 cups chopped palak (spinach)
  • ½ an onion, steamed and ground to a paste
  • ¼ cup cashew nuts, soaked in water to cover for 4 hours, rinsed and ground to a paste
  • ¼ cup chopped tomatoes
  • Green chilli paste (to taste)
  • Black or unrefined salt (to taste)
  • 2 tbsp soy yoghurt
  • Lemon juice (to taste – optional)

Method

Mix the onion and cashew pastes together and heat for 5 minutes, stirring continuously. Add the chopped tomatoes and the spinach. Let the spinach cook until well done. Add the soy yoghurt, salt and the green chilli paste. Add water to obtain thickness of your choice. Allow to boil for a few minutes. Add lemon juice to taste, if desired.

Serves 3-4
