Potato Leek Soup


  • 1 medium-sized potato, cubed
  • 1 leek stalk, chopped
  • Few sprigs of celery
  • 1 carrot, cubed
  • 50 g pumpkin, cubed
  • 1 cup vegetable stock (or more as required)
  • Unrefined salt to taste


In a pot, simmer potato, leek, celery, pumpkin and carrot in the vegetable stock until tender. Blend until smooth. Add salt to taste, and serve.

Serves 1
