Cold Soup

Ingredients

  • 1 cup chopped unpeeled beetroot, steamed
  • ¼ cup raw chick peas (garbanzo beans), soaked for 4-6 hours and pressure cooked
  • 1-2 cloves of garlic
  • 4-6 peppercorns
  • ½ cup unrefined salt
  • 3 cups water
  • 2-3 tbsp thick coconut milk
  • 1 tbsp fresh coriander leaves, for garnish

Method

Blend all the ingredients together except coconut milk and coriander leaves. Transfer to a serving bowl, garnish with a tbsp of coconut milk and coriander leaves. Serve cold.
