Cold Soup
Ingredients
- 1 cup chopped unpeeled beetroot, steamed
- ¼ cup raw chick peas (garbanzo beans), soaked for 4-6 hours and pressure cooked
- 1-2 cloves of garlic
- 4-6 peppercorns
- ½ cup unrefined salt
- 3 cups water
- 2-3 tbsp thick coconut milk
- 1 tbsp fresh coriander leaves, for garnish
Method
Blend all the ingredients together except coconut milk and coriander leaves. Transfer to a serving bowl, garnish with a tbsp of coconut milk and coriander leaves. Serve cold.
Serves 3-4
