Tofu French Toast

Western style breakfasts need a little innovation to make them vegan and healthy. Here is one idea.



Except the bread, mix all the ingredients together in a blender until smooth. Pour the mixture into a shallow dish, dip the bread in it and cook on a hot pan, or in a preheated oven at 200 °C for 5 minutes, turning over once when the edges begin to brown.

Serve with fresh berries or date syrup.
