Minestrone Soup

Ingredients

  • 4 medium-sized tomatoes, quartered
  • 1 stalk of fresh celery, chopped
  • ¼ medium-sized green cabbage, roughly chopped
  • 1 medium-sized onion, chopped
  • 6 cloves garlic
  • 1 medium unpeeled carrot, diced
  • ½ medium unpeeled green zucchini, diced
  • 3 cups water / vegetable stock
  • ⅛ tsp dried oregano
  • ⅛ tsp unrefined salt
  • ⅛ tsp tabasco sauce
  • 1-2 fresh parsley sprigs, to garnish

Method

Steam all vegetables together until tender. In a saucepan, take the steamed vegetables, add vegetable stock, oregano, salt and tabasco and bring the mixture to a boil. Garnish with parsley sprigs and serve piping hot.
