Tofu Akuri **
Ingredients
- 200 g firm tofu
- ¼ cup finely chopped onions
- ¼ cup finely chopped tomatoes
- ½ tsp finely chopped green chillies
- finely chopped capsicum, mushrooms or any other vegetables of your choice (optional)
- ½ tsp of turmeric
- ½ tsp of sea salt
- pepper or crushed garlic as desired
- finely chopped coriander for garnishing
- olive oil (optional)
- soy milk (optional)
Method
Drain the tofu and crumble it using a fork or potato masher. In a non stick or thick iron pan lightly dry sauté the onions, chillies, other vegetables if any and then tomatoes. Add crumbled tofu first, and then add turmeric, sea salt and other spices and sauté a bit more. To make it softer, a bit of soy milk may be added. Garnish with chopped coriander and a dash of olive oil (optional) and serve.
Variations
For a more cheesy or egg like flavour add ½ cup nutritional yeast to the mixture while cooking.Serves 2.
