1.ย ย ย Mix all the ingredients together except beetroot.
2.ย ย ย Slice the beetroot using a mandolin slicer. Place 8 slices on a work surface.
3.ย ย ย Place a tablespoon or so of the cheese mixture on each of the four slices and cover each with the other four slices.
4.ย ย ย Top with a small dollop of the remaining cheese and garnish with dill leaf or microgreens and serve.
