Potato And Leek Crusted Pie

Ingredients

  • 2 potatoes, unpeeled, sliced and steamed
    2 leeks, roughly chopped
  • 1 cup cashew cream
  • Unrefined salt to taste
  • Pepper to taste
  • Rosemary to taste
  • Oats crumble – whole rolled oats, salt to taste, dried herbs as per taste

Method

Layer the potatoes with the roughly chopped leeks, cashew cream, salt, pepper and rosemary. Keep layering until the dish is full. The last layer should of potatoes and some cream. Cover and bake for 30-45 minutes in a pre-heated oven at 200 °C. Bake uncovered for 10-15 minutes until browned lightly.

For the oats crumble – mix the oats with some water, salt and herbs and bake at the same temperature 10-15 minutes until lightly browned and crisp. Sprinkle the dish with the oats crumble and serve.
