Potato And Leek Crusted Pie


  • 2 potatoes, unpeeled, sliced and steamed.
  • 2 sticks leeks roughly chopped
  • 1 cup cashew cream
  • salt to taste
  • pepper to taste
  • rosemary to taste.
  • oats crumble- whole oats, salt to taste, dried herbs as per taste.


Layer the potatoes with the roughly chopped leeks, cashew cream, salt and pepper and rosemary herbs. Layer by layer until the dish is full. Last layer should be with potatoes and some cream. Cover and bake for 1 hour.

Make oats crumble by mixing the oats with some water, salt and herbs and baking at the same time for one hour.

Sprinkle the dish with the oats crumble.
