Mushroom Melange

Ingredients
• 2 cups mushroom steamed
• ½ of each – capsicum, green, red and yellow
• 3 spring onions
• 2 small onions, diced
• 1 ½ tsp garlic, diced
• 1 ½ tsp ginger, julienned
• 1 tsp oregano
• parsley for garnishing
• 1 tsp corn flour paste
• salt, paprika and soy sauce to taste

Method
Lightly steam the mushrooms. Dry roast the onions and garlic till translucent. Add ginger and all the bell peppers. Sauté for 2 minutes. Add mushrooms and soy sauce, stir-fry for 2 minutes. Add oregano, salt and paprika. Add corn flour paste and water/stock. Cook for 2 minutes. Serve hot
