Baked Beans with Rice

Ingredients

  • 3 cups cooked beans of choice – chickpeas (channa), kidney beans (rajma), black-eyed beans, black beans, cannellini beans, etc.
  • ⅔ cup brown rice, washed and soaked for 8-10 hours
  • 3 onions, chopped and sprinkled with salt
  • 1 tbsp red pepper powder (sweet)
  • 1 tsp chilli powder
  • 2 tomatoes, cut into small pieces
  • Unrefined salt and black pepper to taste
  • 2 cups water
  • A bunch of basil, chopped

Method

Heat a pan and fry onions until golden. Then add the red pepper powder and chilli powder. Add the rice which has been washed well ahead. Cook for 2-3 minutes, then add the tomatoes, black pepper powder, salt and 2 glasses of water and cook until all the water has been absorbed.

Take the beans in a large baking tray, add the rice, salt to taste and at the end, add the basil. Mix well and bake for about 20 minutes at about 180 °C, in a preheated oven.

Serves 3-4
