Potato & Sweet Potato With Rosemary
This simple dish is incredibly good – always a favourite.
- 2 medium-sized potatoes
- 1 medium-sized sweet potato
- Dried rosemary
- Unrefined salt and pepper to taste
Cut equal amounts of unpeeled potato and sweet potato into about 1½ – 2 cm cubes. Spread out on a tray and sprinkle dried rosemary, salt and pepper and mix well. Place in the oven at 400 ºF (205 ºC) and bake, stirring every 10 minutes or so. Cook for 20 – 30 minutes, until they are done. Alternatively, mix with salt and cook on very low heat and when almost done, add the rosemary. Delicious.
