Creamy Coriander Garlic Dressing
Adapted from Eric Malvestiti’s recipe on Mc Dougall. This is a completely fat free dressing.
- 250 g tofu
- ½ cup rice vinegar
- ¼ cup soy sauce
- 2-3 cloves garlic
- ½ cup packed fresh coriander (use part of the stems as well as the leaves)
- A few mint leaves, for the garnish (optional)
Take all the ingredients except coriander in a blender and blend until smooth. Add coriander and pulse until coriander is well chopped. Pour into a jar with a lid and refrigerate for at least an hour to allow flavors to blend. This will keep in the refrigerator for about 5-6 days.
Fresh basil, parsley or mint may be substituted for the coriander for a delicious variation.
