Tahini Bundt Cake

This is a really healthy cake recipe that is super simple.

Ingredients

  • 1¾ cups whole wheat flour
  • ½ cup tahini (sesame butter)
  • 1 tsp pure vanilla extract
  • ¾ cup jaggery
  • 1 cup nuts of choice
  • 1 cup raisins
  • 1 tsp baking powder
  • Cinnamon powder to taste
  • 1 cup orange juice/sweet lime juice
  • Any nut butter for greasing
  • Cashew powder for sprinkling on the cake

Method

Preheat the oven to 275 ºF (135 ºC). Prepare a bundt baking pan by greasing it, using any nut butter.

Mix all the ingredients together except orange juice and cashew powder. Add the orange juice, mix well and bake right away. (Else, you can mix all the dry ingredients and in another bowl the wet ingredients and then mix both, stir well and bake. Do not mix with an appliance, just with your hands or a spoon). The baking powder and orange juice combination gives an effervescence which helps the cake rise, so it is important to bake soon after mixing in the orange juice.

This cake takes about ½ an hour to bake. Check to see if it is done by sticking in a fork. If the fork comes out clean, its ready.

Serve lightly topped with cashew powder.

Note

This recipe contains jaggery and is not suitable for those who are working on disease reversal.
