Almond Milk

Almonds are high in protein and contain no cholesterol, being a plant food. Almonds also have Vitamin E, which is considered a powerful antioxidant, with cancer-fighting qualities. They are also high in magnesium, phosphorus, potassium, iron, zinc, copper, manganese and trace amounts of the B vitamins. Almonds are higher in calcium and in fibre than any other nut. Whole almonds contain nearly double the fibre of blanched ones and are very low in saturated fat. Almond milk is a milky drink made from ground almonds. Unlike animal milk, almond milk contains no lactose and can be used as a substitute for animal milk in many recipes.


  • ½ cup whole almonds, soaked in water overnight
  • 2 cups fresh water
  • 2-3 seedless dates


Drain and rinse the soaked almonds. In a high speed blender or grinder, grind the soft almonds to form a smooth paste, adding a little water if required. Mix the dates in and blend again with more water, until you obtain the desired consistency.

Once prepared, use within a day.
