Guacamole

Ingredients

  • 1 ripe avocado
  • ¼ cup finely chopped tomato
  • 1 clove garlic, finely grated or well crushed
  • 1 – 2 tsp lemon juice
  • ½ tbsp finely chopped fresh parsley or fresh coriander
  • Unrefined salt to taste
  • 1 tsp finely chopped green chilli (optional)

Method

Scoop out the avocado and mash gently using a fork. Add the rest of the ingredients and mix.

Serve with corn chips, on bread or vegetable sticks.

Variation

Add 1-2 tsp orange juice in addition to lemon juice.

Replace garlic with onion.

Serves 4 – 6
