Whole Wheat Vegan Brownies

  • 1 cup whole wheat flour
  • 1/2 cup cocoa powder
  • 1-1/4 cups date paste
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cups chocolate chips (or finely cut non dairy cooking chocolate) (optional)
  • 1/4 cup chopped walnuts
  • 1/3 cup soy milk plus a little extra soy milk if the mixture is too difficult to mix
  • 1/4 cup silken tofu or firm tofu or thick cashew cream
  • 1 tbsp vanilla extract


Preheat oven to 350 degrees F. In large bowl, whisk together flour, cocoa powder, baking powder, salt, walnuts and chocolate chips (if using). In a blender, blend the soy milk, date paste, tofu and vanilla. Add blended mixture to the flour mixture in the large bowl and stir until just combined. Batter will be thick. Spread out the batter evenly into an 8-inch square baking dish lined with parchment paper. Bake for 35 minutes or until toothpick inserted in the middle comes out clean.
