Mixed Vegetables in Red Gravy

Ingredients (Vegetables)

  • 300 gm cauliflower
  • 1 potato
  • ½ cup green peas
  • 1 carrot
  • 200 gm French beans

Ingredients for gravy

  • 3 tomatoes
  • 1 cup ground cashew nuts
  • 1 tsp cumin seeds
  • 30 gm grated ginger
  • 1 green chili, cut long
  • 1 tsp red chili powder
  • 1/4 tsp haldi
  • 1 tsp garam masala
  • 1 tsp coriander-cumin powder
  • 1 tsp salt

Method

Cut all vegetables in medium sized cubes/pieces and steam. Puree the tomatoes and cashew nuts in a blender. Take a pan and sauté the cumin seeds, grated ginger and green chili. Add the tomato puree and after 5 minutes mix in the chili powder, garam masala, coriander-cumin powder and salt. Stir until the gravy is ready. Add all the vegetables and let it cook for 5 minutes.
