Soy Mince Pie
- 4 large potatoes
- 5 small brinjals/eggplant
- Bolognese sauce
- Mustard paste to taste
- 1 tbsp soy milk
- Unrefined salt to taste
- Basil and oregano to sprinkle
- Whole wheat bread crumbs
Prepare the filling as per the bolognese sauce, however it must be semi dry.
Steam and mash the potatoes, add salt, a dash of mustard, some soy milk and mix well. Cut the brinjals into thin slices. Preheat the oven to 190 ºC. In a baking dish, spread a thin layer of the mashed potato. Add a layer of the bolognese sauce and a layer of brinjals above it.
Spread a second layer of bolognese sauce and spread the mashed potato on top of it. Sprinkle with bread crumbs and a little basil and oregano. Bake in the preheated oven for 30 minutes, until the bread crumbs turn brown.
