Soy Mince Pie


  • 4 large potatoes
  • 5 small brinjals/eggplant
  • bolognese sauce
  • 1 tbsp soy milk
  • mustard paste
  • a little basil and oregano
  • whole wheat bread crumbs
  • salt to taste


Prepare the filling as per the bolognese sauce, however it must be semi dry.

Steam and mash the potatoes, add salt, a dash of mustard, some soy milk and mix well. Cut the brinjals into thin slices. Preheat the oven. Spread a thin layer of the mashed potato. Add a layer of the bolognese sauce and a layer of brinjals above it.
Spread a second layer of bolognese sauce and spread the mashed potato on top of it. Sprinkle with bread crumbs and little basil and oregano. Bake for 30 minutes, till the bread crumbs turn brown.
