Rocket And Sweet Potato Salad

Ingredients

  • 100 g arugula (salad rocket) leaves
  • 250-300 g unpeeled sweet potatoes, chopped into 1” cubes, steamed or roasted
  • 1 large onion, finely sliced
  • 2 medium tomatoes, thinly sliced
  • 1 tsp unrefined salt
  • ¼ tsp black pepper (kali mirch) powder
  • 2 tbsp lemon juice

Method

Mix all the ingredients together in a bowl and serve!
