Rainbow Vegetables with Soy – Chilly Sauce

This is a rainbow dish, Korean style of different cooked vegetables served with a simple spicy sauce. It’s usually best to make it for 4 people or more since there are many different items making one dish.

Ingredients

  • 500 gms spinach
  • 1 yellow capsicum
  • 1 red capsicum
  • 1 radish
  • 1 carrot
  • 200 gms button mushrooms
  • 1 medium brinjal
  • 250 gms broccoli
  • 6 – 8 cloves garlic, ground
  • 1 spring onion, chopped
  • 1 tablespoon powdered peanut or cashew
  • 3 – 4 tbsp soy sauce
  • 1 tbsp roasted sesame seeds

For the sauce

  • 2 tsp Kashmiri chilly powder
  • 1 tbsp vinegar
  • 1 clove garlic
  • ¼ medium onion
  • juice of 1/2 lime
  • 1 tsp date paste
  • ¼ tsp roasted sesame
  • 1 tbsp soy sauce

Method

Spinach: Wash. Blanche the spinach by first steaming and then placing in ice water. Drain. Rub the spinach with garlic, salt, roasted sesame and the nut powder. Top with a few roasted white sesame seeds.

Yellow capsicum: Slice and steam. Mix with 1/8 tsp of salt and a little water in a pan. Top with a few roasted black sesame seed.

Red capsicum: Slice and steam. Mix with 1/8 tsp salt, a few drops oil and a little water in a fan. Top with a few roasted black sesame seed.

Radish : Julienne and steam with 1/8 tsp salt, mix with a little water and the nut powder in a pan. Top with a few roasted black sesame seed.

Carrot: Julienne and steam with 1/8 tsp salt, mix with a few drops oil and a little water in a pan. Top with a few roasted black sesame seeds.

Mushroom:  Slice and steam with soy sauce and garlic and in a fan. Top with a few roasted white sesame seeds.

Brinjal:  Silce and steam in a steamer. Rub the brinjal with garlic, salt, roasted sesame oil and the nut powder. Top with a few roasted white sesame seeds.

Broccoli:  Break into florets and steam in a steamer. Rub with garlic, salt and the nut powder. Top with a few roasted white sesame seeds.

The sauce:  Blend the ingredients together and place in a bowl with the dish

Arrange the vegetables in a round platter one by one with contrasting colors next to each other. Serve this beautiful rainbow dish with the sauce.

Serves 4

Variations: use vegetables of your choice using similar principles making sure you have a good variety of colors.
