Potato, French Bean & Walnut Salad with Mayonnaise


  • 1 cup steamed potato chunks
  • 1 cup steamed French beans (cut into 1″ pcs)
  • 6-8 walnuts
  • 2 tbsp cashew mayonnaise (or as required)
  • A few lettuce leaves, for the garnish (optional)
  • 1 tbsp finely chopped celery and spring onions, for the garnish (optional)
  • 1 tbsp chopped parsley, for the garnish (optional)


Place all the ingredients in a mixing bowl (except the items for garnish). Toss gently. Serve on a bed of lettuce, topped with celery and parsley.
