Papaya and Greens Salad
Fruits are not meant to be mixed with meals. However, this delicious salad can be enjoyed as a meal in itself.
- 1 small ripe papaya
- 1 cup baby spinach or any green leaves of choice
- ¼ cup grated fresh coconut
- Juice of 1 lime
- Unrefined salt to taste
Spread the leaves on a serving plate. Keep aside. Peel, deseed and chop the papaya into ½ inch cubes and place them over the bed of greens. Sprinkle salt, lime juice and coconut on top and serve.
