- 1 ripe avocado
- ¼ cup finely chopped tomato
- 1 clove garlic, finely grated or well crushed
- 1 – 2 tsp lemon juice
- ½ tbsp finely chopped fresh parsley or fresh coriander
- Unrefined salt to taste
- 1 tsp finely chopped green chilli (optional)
Scoop out the avocado and mash gently using a fork. Add the rest of the ingredients and mix.
Serve with corn chips, on bread or vegetable sticks.
Add 1-2 tsp orange juice in addition to lemon juice.
Replace garlic with onion.
