Green Bean Salad with Peanuts

Ingredients

  • 500 g chopped green (French) beans (cut into 1″ long pieces)
  • 1 tsp unrefined salt
  • 2 tbsp lemon juice
  • ½ cup roasted peanuts, coarsely crushed
  • 2 tbsp raisins

Method

Place the green beans in a steamer, sprinkle with salt and steam until tender. Transfer to a serving bowl and add the rest of the ingredients while the beans are still warm. Mix together and serve.

Serves 4-6
