Green Bean Salad with Peanuts
- 500 g chopped green (French) beans (cut into 1″ long pieces)
- 1 tsp unrefined salt
- 2 tbsp lemon juice
- ½ cup roasted peanuts, coarsely crushed
- 2 tbsp raisins
Place the green beans in a steamer, sprinkle with salt and steam until tender. Transfer to a serving bowl and add the rest of the ingredients while the beans are still warm. Mix together and serve.
