Fermented Rice Porridge (Kanji)
- 1 cup cooked whole rice (red rice, brown rice)
- 2 cups water
- flavorings of your choice – onions, green chilies, ginger chili paste, mustard and curry leaf temper, vegan curds etc
- pinch of salt
Soak the cooked rice overnight in the water. Next day mix rice, flavorings and water in a blender or with a fork, to make a surprisingly filling porridge or a drink.
