Cold Tomato Basil Soup
Tomato basil soup is similar to a gazpacho soup, but with a little extra flavour. The natural sweetness of the tomatoes really comes through in this recipe.
- 1 kg tomatoes, roughly chopped
- 100 g fresh basil, chopped
- 2 cups vegetable stock/ water
- 2 cloves garlic
- 2 tbsp balsamic vinegar
- 1 tsp unrefined salt
- 1 tsp black pepper (kali mirch) powder
Take all ingredients together in a blender and blend until almost smooth, or until desired consistency is reached. Transfer to a large saucepan and simmer over low heat for 10 minutes. Refrigerate when soup comes to room temperature, for 4-6 hours. Serve chilled.
