Cold Tomato Basil Soup

Tomato basil soup is similar to a gazpacho soup, but with a little extra flavoring. The natural sweetness of the tomatoes really comes through.


  • 1 kg tomatoes, roughly chopped
  • 100 gm fresh basil, chopped
  • 2 cups vegetable stock/ water
  • 2 cloves of garlic
  • 2 tbsp balsamic vinegar
  • 1 tsp unrefined salt
  • 1 tsp black pepper powder


Place all ingredients in a blender and blend until almost smooth or until desired consistency is reached. Transfer to a large saucepan and simmer over low heat for 10 minutes. Refrigerate when soup comes to room temperature for 4-6 hours.. Serve chilled.
