This is an awesome and filling dip to have in your fridge for when the urge to munch arises.
- 1 cup boiled chickpeas
- 1 tbsp fresh lemon juice
- 1 clove garlic, crushed
- 1 medium onion, chopped
- 1 medium tomato, chopped
- 4 onions, thinly sliced
- 1 tbsp chopped green chilies
- 1 tbsp seed butter
- salt to taste
- 2 tbsp coriander (optional)
Place the cooked chickpeas, draining most of the water, in a food processor or blender. (Keep the drained water aside for liquefying if required)
Add the lemon juice and garlic. Pulse briefly, until the chickpeas are slightly chopped.
Add the onion and pulse again until the mixture is chunky.
Place the mixture in a bowl and add the remaining ingredients. Mix well. Cover and chill before serving.
