Fragrant Brown Rice
- 2 cups whole brown basmati rice, rinsed and soaked in 4 cups of water for 2 hours
- 2 cloves
- 1″ long piece cinnamon
- 2 pods green cardamom
- 4 cups water
- ½ tsp (about 20 strands) saffron
- 1 tsp unrefined salt
Drain and rinse the soaked rice.
In a pan, roast cloves, cinnamon and cardamoms for 1 minute or until they are fragrant. Add 4 cups of water, saffron and salt. When the mixture comes to a boil, add soaked rice. Cover the pan and cook on medium heat until the rice is completely done and fluffy. Serve hot.
