Broccoli Salad

This recipe was demonstrated by Lisa Pitman during her Eating without Heating demos in India. 


  • 5 cups broccoli florets
  • ½ cup sunflower seeds
  • ¼ chopped red or sweet onion
  • ½ cup raisins


  • ½ cup cashews, soaked (4-6 hours) and drained
  • 2 dates
  • 1 tbsp apple cider vinegar
  • ⅛ tsp unrefined salt
  • 6 tbsp water


In a large mixing bowl, toss together the broccoli, sunflower seeds, red onion and raisins. In a blender, combine the dressing ingredients and blend until smooth.
Pour the dressing over the salad ingredients and toss to coat.

Serves 4-6
