Better-Than-Tuna Salad

  • 1 cup boiled garbanzo beans (chickpeas) or 1 cup tinned chickpeas
  • ¼ medium sized onion chopped
  • 2 tbsp finely chopped capsicum – red or green
  • 2 tbsp finely chopped celery
  • 5 – 6 tbsp vegan mayonnaise
  • Lemon juice to taste
  • Salt and pepper to taste
  • Parsley for garnish (optional)

Method

Press the garbanzo beans between your fingers to flatten them, avoiding smashing them. Add the other ingredients. Mix well. Garnish with parsley and serve.
