Tomato Soup with Basil and Olives
Ingredients
- 1 onion, chopped and sprinkled with salt
- 7-8 peeled and grated tomatoes
- 4 cloves garlic
- a small bunch of basil chopped
- 7 olives, chopped in to circles
- 1 tsp salt or to taste
- 1/2 tsp black pepper
- 1/4 cup of rice
- 1/2 tsp red pepper powder
- 1 tsp jaggery
Method
Heat the pot; add the onion and garlic and fry them in their own water for a while, till become golden. Then add red pepper powder and 1 glass water. Add the tomatoes, the black pepper and the jaggery. Then add the rice and 2-3 more glasses of water. Boil till the rice is almost ready. Then add olives and finally add the basil and switch off the fire.
