Tomato Soup with Basil and Olives

Ingredients



  • 1 onion, chopped and sprinkled with salt

  • 7-8 peeled and grated tomatoes

  • 4 cloves garlic

  • a small bunch of basil chopped

  • 7 olives, chopped in to circles

  • 1 tsp salt or to taste

  • 1/2 tsp black pepper

  • 1/4 cup of rice

  • 1/2 tsp red pepper powder

  • 1 tsp jaggery


Method

Heat the pot; add the onion and garlic and fry them in their own water for a while, till become golden. Then add red pepper powder and 1 glass water. Add the tomatoes, the black pepper and the jaggery. Then add the rice and 2-3 more glasses of water. Boil till the rice is almost ready. Then add olives and finally add the basil and switch off the fire.
