Snake Gourd & Celery Soup
Ingredients
- 1 cup chopped onions
- 1 medium snake gourd - chopped
- 2 – 3 sticks celery or even celery leaves will do
- vegetable broth
- 1 tsp olive or other oil
- Salt and pepper to taste
Method
Lightly sauté the onions in oil in a pot. Add chopped snake gourd and a little water and allow the snake gourd to cook. When it is partly cooked (make sure that it does not overcook. The green color should remain) add the celery and allow it to cook a little longer. Both vegetables should remain green. Add some vegetable broth and put in the blender. Once the soup is a creamy paste, add water and salt as needed. This soup tastes good served hot or cold.
